The Future of Nutrition in Your Ancestor's Kitchen: Obesity Prevention with Traditional Foodways
Description: Seminar, one hour. Analysis of modern and traditional eating patterns and effects on health. Evaluation of the role of gut microbiota in overall health, and which food patterns optimize the odds of having a healthy microbiome. Discussion of current food insecurity issues and behavioral challenges for healthy diet changes and their impacts on gut health. Exploration of culturally-specific perceptions of food and body weight as well as the significance of culturally-sensitive public health solutions to food insecurity issues. Evaluation of different traditional diets such as the Japanese, Mediterranean, and Mesoamerican traditional diets and their benefits for overall health. Discussion of potential legislative and community solutions towards a more sustainable and healthy future for U.S consumers. P/NP grading. Facilitated by Mariko Hashimoto, with William J.
