The lectures had nothing to do with the assignments. Don't stress at all if you have no idea what's going on during lectures; they covered content which, in my opinion, was too advanced to being taught to incoming freshmen (stuff that you'll learn in upper div EE courses).
The assignments are super easy. Just make sure to show up to lectures and lab. Each lecture and each lab make up 1% of your total grade, so if you skip them, it adds up quick.
This class is easy to cruise through and not get much out of, however, if you are interested in the material, you can absolutely get a lot out of the course. It's a very open-ended course in terms of how much you want to learn and apply the material in lectures, and to me, the lectures were incredibly interesting. Lab can sometimes be a bit tedious (doing motion patterns, while very cool, can sometimes be a bit finicky to get right), but is still a solid introduction to working with embedded devices.
Overall, you honestly just get out of this course what you put into it, and if you're into the material, it'll be a really fun time.
